Perfect Pumkin Pancakes
Perfect Pumpkin Pancakes are the absolute best and so easy to make with everyday ingredients! Packed full of fall flavor with pumpkin, cinnamon, ginger, and nutmeg!

- A large and a medium size mixing bowl

Ingredients
- 2 cup all-purpose flour
- 3 tsp baking powder
- 1 tsp salt
- 1½ tsp cinnamon
- ½ tsp ground ginger
- ½ tsp nutmeg powder
- ⅛ cup brown sugar
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 2 eggs large
- 4 tbsp butter melted
- 1½ cup milk
Instructions
- Preheat frying pan on low to medium heat. On digital stove, we use setting 4 (of 10).
Dry ingredients
- In a large bowl, whisk together the flour, baking powder, salt, sugar, cinnamon, ginger and nutmeg.
Wet ingredients
- In a separate medium bowl, whisk together the vanilla extract, pumpkin puree, eggs, melted butter and milk.
Combine ingredients
- Pour the wet ingredients over dry ingredients and whisk together to combine. The batter will be lumpy, do not over mix.
- Pour batter on frying pan to desired size. Let sit until golden brown. Flip over and brown other side.
- Best served with pancake syrup (we prefer Aunt Jemima's Original Syrup), but also goes well with butter, whipped cream or what ever you choose for on top of your pancakes.
