Jamaican Banana Fritters



Don’t you hate when bananas get over-ripe? Throw them away, right? HELL NO! You have two options with those over-ripe bananas. Make Banana Bread or make some yummy Banana Fritters!

Equipment

  • Frying pan
  • Mixer e.g. Kitchen Aid or staff mixer

Ingredients

  • 3 banana ripe, mashed
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 0.5 cup granulated sugar I use brown sugar, better flavor
  • 2 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.25-0.5 cup milk
  • Cinnamon sugar for sprinkling on top

Instructions

  • Peel and mash the ripe bananas
  • Beat egg, sugar, vanilla, cinnamon and nutmeg
  • Blend egg mixture with mashed bananas. Make sure it is all incorporated
  • Sift flour and baking powder into the banana/egg mixture. Mix it all together. If using a kitchen aid, switch from whisk attachment to mixing attachment.
  • If the mixture seems to be too thick add a little milk… pour in enough to get to the right consistancy. You want it to be about as thick as pancake batter.
  • Add oil to a fying pan and place on medium high heat. Drop spoonfuls of the banana fritter batter into the hot oiled frying pan. Flip when you see the edges starting to get brown and golden.
  • Lastly, combine cinnamon and sugar together to create your cinnamon sugar. This is used to sprinkle on top of the fritters once they are finished cooking and still hot.
  • Sprinkle cinnamon sugar on top of the hot fritters. Best result is to do so as they come out of the pan. This slightly melts the sugar and gives optimal flavor. Enjoy!
